What Makes Tequila Unique?

For a spirit to be labeled as tequila, it must meet certain legal requirements set forth by the Mexican government. Tequila must be produced in specific regions of Mexico, primarily in the state of Jalisco, and must be made using blue agave as the main ingredient. The agave plant must be grown in the designated regions and must be harvested by hand. To make tequila, the mature blue agave plant is harvested and its leaves are trimmed to reveal the core, which is then cooked to extract its sugars.
