He said, ‘Look, when you are a pilot, the pleasure is not necessarily flying on an airline; the pleasure is in flying itself. If you become a pilot, you will never be able to be a doctor. However, if you become a doctor, at some point in your life, if you still like it, you can also become a pilot.'”

Educated at La Sabana University and further trained at the Institute of Functional Medicine in the United States, Dr. Jaramillo holds a postgraduate degree from Harvard University in Physiology and Clinical Biochemistry. His journey in medicine and nutrition began under the mentorship of Stanley Dudrick at Yale University, shaping his humanistic approach to healthcare.

He went on to talk about metabolic diseases, which, as he explained, involve many factors that affect various other aspects of health. “Metabolic syndrome is closely related to the leading cause of death worldwide, which is cardiovascular disease, and the second leading cause, which is cancer. When I was in college, I asked why these diseases were related to cancer. The response was often unclear, but now we know that insulin resistance and the preceding excess insulin are linked to metabolic problems caused by lifestyle habits.”

Dr. Jaramillo also discussed common health issues that tend to affect the Hispanic community. “It seems very sad to me when I see commercials here that say, ‘Remember, if you are Latino, you need to get vaccinated against COVID more than the rest because Latinos die more from this. What is happening with our Latin community? We are a very inflamed community… We work long hours and don’t have time for anything else. There is a great industry that doesn’t care about our health. That’s why we are such a sick community. That’s why when we get COVID, we have so many complications. But it’s not because of our genes; it’s because of how inflamed we live.”

Dr. Jaramillo’s book, “Como, el arte de comer para estar bien,” reflects his strong dedication to offering easy-to-follow nutrition advice. “I wanted to make a book that would be a nutrition manual for anyone. Whether you’re vegan, physically active, following keto, pregnant, or over 60 and an athlete, there is guidance for everyone.”

Wrapping the interview up, Dr. Jaramillo shared his thoughts on how stress affects us and the different ways to manage it. “If stress is an organized, orderly, normal, and necessary response that the body has to an external or internal event… chronic stress can overwhelm our body’s adaptive mechanisms. Many things, like fasting, can have a positive effect in moderation, but chronic stress undermines our health.” He unwinds and finds peace in meditation, exercise, and spending time with family: “Cooking for my family de-stresses me a lot,” he shared.
